What looks like ginger, has a faint sweetness and tastes a little bit nutty? Raw, about-to-be-trendy sunchokes.
Being appreciated in your pure, raw glory is something of a rite of passage in a vegetable's life. And, as predicted by Andrew Knowlton, Bon Appetit's Foodist, the time has come for Jerusalem artichokes.
